Standard POS apps are designed for clean offices and stable corporate networks. They fail in the kitchen. When temperatures hit 120°F near grills, steam fills the air, printers get jammed, and local Wi-Fi drops, operations shouldn't halt.

We treated physical, network, and environmental failures as default states. Servingoo nodes run on local hardware with write-ahead logging (WAL), meaning your cashier terminal and KDS screens talk to each other directly via local ethernet lines even when the internet is entirely down.
